Ingredients
Here’s what you need for this magical pot of goodness:
Vegetables
- 1 small head of green cabbage, chopped
- 3 carrots, peeled and sliced
- 3 celery stalks, chopped
- 1 green bell pepper, diced
- 1 large onion, diced
- 3 garlic cloves, minced
- 1 can (14.5 oz / 400g) diced tomatoes (with juice)
Broth & Flavor
- 6 cups (1.5 L) low-sodium chicken or vegetable broth
- 1 tsp olive oil
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp dried basil
- ½ tsp oregano
- Pinch of cayenne pepper (optional, for a kick!)
How to Make It
There’s nothing fancy here – just classic soup cooking done right.
1. Sauté the aromatics
Heat olive oil in a large pot over medium heat. Add diced onion, garlic, and green bell pepper. Cook for 3–4 minutes until the onion is soft and translucent – your kitchen will already start smelling amazing.
2. Add veggies and seasonings
Toss in the chopped carrots, celery, and cabbage. Sprinkle over all your seasonings: salt, pepper, paprika, basil, oregano, and cayenne if you’re using it. Stir everything well to coat the veggies with those beautiful flavors.
3. Simmer with broth and tomatoes
Pour in the diced tomatoes (with juice!) and broth. Give it a good stir, bring to a boil, then lower the heat and let it simmer gently for about 30 minutes, or until the cabbage and carrots are tender.
4. Taste & adjust
Once it’s done simmering, taste and adjust the seasoning. Want it saltier? Add a pinch more. Too thick? Add a splash of extra broth or water. This soup is super forgiving.
Serving Suggestions
This soup is naturally light, so feel free to bulk it up if you like:
- Add a handful of cooked, shredded chicken for protein.
- Toss in some white beans or chickpeas.
- Top with a spoonful of pesto or grated Parmesan.
- Serve with crusty whole-grain bread for a hearty meal.
Final Notes
Don’t let the “fat-burning” name fool you – this is real food. Wholesome, cozy, veggie-packed soup that tastes like it came from a good kitchen, not a diet plan. You’ll be surprised how comforting and flavorful it is… even without butter, cream, or meat.
